Active principles
The main constituent of fresh unbruised garlic is alliin. When the tissues are damaged this is degraded by an enzyme (aliinase) into pyruvic acid and 2-propensulfenic acid, the latter however is immediately transformed into allicin, which has an antiseptic activity. The air oxidation of allicin immediately leads to the formation of diallyl disulfide, the main constituent of the essence that gives the characteristic odor. The presence of ajoene (lipoxygenase inhibitor and having platelet antiplatelet activity) is also reported.
